Dr. Barnard's Roasted Red Pepper Oil Free Salad Dressing

FYI-For those of you who haven't seen Forks Over Knives, or those of you who saw it and want to share it with loved ones, the movie is finally for sale on DVD and Blue Ray. Yipee! You can order it here before it hits stores.

Not the most glamorous photo, I know, but I didn't want to hold out on you any longer.

I was first served this salad dressing at an event at Whole Foods and I was wowed. It comes straight from Dr. Neal Barnard himself. Thank you Ellen, our Whole Foods Healthy Eating Specialist, for introducing us to this dressing!

The ingredients are so simple: jarred roasted red pepper (of course you could roast and peel one yourself if you are so inclined), raw garlic, balsamic vinegar, salt, pepper and thyme. I'm sure you could use whatever herb tickles your taste buds. The resulting dressing is so packed with flavor that you will NEVER miss the oil.

Again, watch out if you have a raw garlic sensitivity. I recommend roasting your garlic first if that is the case. I imagine that your dressing would be out of this world if you went that extra step.

Get the recipe here for this tasty oil free dressing.

LOVE this... because I, for one, am not inclined to roast my own peppers ;)

Hooray! I've been looking forward to seeing this movie since I missed it in theaters.

Is it easy to find roasted red peppers not packed in an oil concoction? I have some at home, but I noticed they are packed in oil.

There is also a book Forks Over Knives that just came out and there are some great looking recipes in it!

I noticed that the FOK is a pre-order. You can also pre-order on Amazon:)

I get my roasted red peppers from Trader Joes and they are not packed in oil. I've never tried to get them anywhere else. Does anyone have any suggestions?

Whole Foods 365 brand makes an organic jarred roasted red pepper product without oil. Both the Trader Joe's brand the the Whole Foods brand are excellent.

Thanks for the update! I've been wanting to see this movie for awhile too! Didn't know there was also a book with some recipes. Will have to check that out.

Wendy, I followed my Google Reader to your actual blog for this post and saw the link to Julie Ann's Reduction blog. I have that cookbook and spent at least two hours this morning reading all her posts. Thanks so much! :-)
