And sorry I've been so "distant" these past couple of days. I planned on blogging all about the 4 different types of veggie burgers that I made for our big 4th of July Un-bbq, but I came down with what is either a very nasty cold or even the flu!

All I have energy for right now is to tell you that, in my opinion, the WINNING veggie burger I made was this:
Curried Eggplant Lentil Quinoa Burgers

And the ones that got tossed in the garbage were these:
Roasted Beet and Tofu Burgers

It was a really great experiment. The other two burgers were very, very good and worth making again:
Yukon Gold White Bean Basil Burgers
Mama Pea's Black Bean Burgers

What was your biggest kitchen/food success this holiday weekend?

I love been on a huge veggie burger kick - love them! My biggest success from the weekend was the buffalo tempeh with slaw from Appetite for Reduction. OMG. Totally satisified that spicy, tangy, lip-smacking taste of buffalo wings. Chris even said he will never "need" wings again.

My biggest success was definitely the Sanctuary Dressing from Appetite for Reduction - it was awesome and really reminded me of classic ranch dressing!

Glad you liked the burgers! Did you make the black bean ones from the book or the site? Because I love the new revamped one in the book :)

I'm feeling about 60% now. Hope you can beat that!

I made a delicious dinner of ingredients I had on hand and it turned out so tasty that I plan to make it often! I roasted sweet potato wedges after tossing them in agave syrup and chili powder, I wilted some spinach and dressed it with a mandarin ginger dressing, I roasted some baby portabellas and Bermuda onion after tossing them in sesame oil and a little soy sauce and put those on a bed of quinoa. It was all so freaking delicious. I took a nice photo for my blog also. Yum!
