Toby's Refreshing Salad

OMG.  This is totally worth getting your Cuisinart out for!  It is so easy and heavenly tasting that I would serve this on a weeknight or make it for guests.  A new family tradition! Thank you Toby, my raw food friend, for all that you do.

Toby's Refreshing Salad

2 apples
2 beets
3 carrots
fresh juice of 2 oranges
optional: pomegranate seeds

Peel beets and carrots.  Grate apples, beets and carrots in a food processor or with a hand grater.  Mix gently but well with orange juice.

Great eaten by itself.  I served it over a bed of fresh spinach for a dinner salad.

This looks excellent! I will try it one of these days. Based on my comment to the kids and eating post, I could never serve it to Rebecca - total allergy meal - tree fruit, raw veggies, yikes! But I bet Kari would give it a shot and maybe even Jamie.Then again,on Kari's list on the fridge is citrus - she hates citrus. So maybe Jamie and I will try it!

Wendy, are the beets cooked? Should they be peeled? I've only eaten pickled or roasted beets before, can you really eat them just raw from the ground?

Yes, the beets are raw. And yes, they can be eaten that way. In fact, raw, shredded beets are a great addition to any green salad! Just peel then first, you don't want any dirt between your teeth!

I just made this to have with our dinner tonight. The thing is, I am not so sure there will be much left by dinnertime because I keep "tasting" it. This is so delicious! I love it - thanks, Wendy!
